Paleo Breakfast Stuffed Sweet Potato
Start your morning with a sweet potato loaded with scrambled eggs, bacon and avocado. This meal will keep you full until lunch!

- 4 small to medium sweet potatoes, washed
- 8 large eggs
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 3 tablespoons butter
- 1 avocado, sliced
- 8 pieces cooked bacon
- Pierce sweet potatoes 5-6 times with fork each; microwave 11-12 minutes, until tender. Slice sweet potatoes in half lengthwise; fluff with fork.
- In medium bowl, scramble together eggs, salt and pepper. In medium skillet over medium heat, add butter. Pour in eggs; gently pull eggs across the pan to create large, soft curds.
- Inside of sweet potatoes, place equal amounts of scrambled eggs. Top with an even amount of avocado and bacon.
